10 oz cherries, Bing, pitted
2 ribs, celery, diced
3 Tbsp fat-free balsamic vinaigrette dressing
2 Tbsp chives, minced
1 Tbsp thyme, stemmed
1/4 tsp black pepper
4 cups fresh baby spinach
3 oz reduced-fat goat cheese
2 Tbsp salted dry-roasted pistachio nuts, chopped
Mix cherries, celery, dressing, chives, thyme, and pepper in a large bowl until the cherries are well coated.
Add spinach; crumble in goat cheese. Toss very gently to coat.
Divide between two plates. Sprinkle each serving with half the chopped pistachios.
